You’re surely familiar with the Croque Monsieur, the French version of our classic ham and cheese sandwich… But what you might not have expected is that there’s a feminine version: the Croque Madame. It’s the same sandwich, but with a fried egg on top.
It bears that name due to its resemblance to the hats worn by ladies in the early 20th century, when the Croque Monsieur and Croque Madame originated.
We’ve added our own personal touch with a teaspoon of Salsa Brava to liven up the béchamel.

Ingredients
- 4 slices bread or sliced bread
- 2 slices cooked ham
- 2 lonchas Emmental cheese
- 4-6 Tb a rather thick béchamel
- grated cheese for gratinating
- 2 eggs

Instructions
- We preheat the oven to 250°.
- While lightly toasting the bread slices, mix the béchamel with the Salsa Brava and set it aside.
- Spread a little spicy béchamel sauce on two of the slices, then place a slice of ham and a slice of cheese on top. Spread a little béchamel on the other slices of bread and place them over the cheese, keeping the béchamel on the inside.
- Now, we place a generous layer of spicy béchamel and the grated cheese over each sandwich, then broil them for a few minutes until golden brown.
- We finish the sandwich with the fried egg and garnish with some sprouts and a little more Salsa Brava.
